Food Find Friday: Nutty Apple Salad

Today’s fabulous and yummy summer recipe comes from my mother-in-law, and is sure to please!

Nutty Apple Salad Ingredients

-2 cups cubed tart apples (I use granny smith’s)

- 2 cups thinly sliced celery (I don’t care for celery, so I omit)

- 2 cups halved seedless grapes (I choose red/purple grapes for color reasons)

- 1 cup mini marshmallows

- 1/3 cup cold evaporated milk

- 1/2 tsp sugar

- 1/4 tsp vanilla

- 3 Tbs mayo

- 3 Tbs peanut butter

- 1/2 cup walnuts

Directions

In a large bowl, combine first 4 ingredients (Or, if you are like me and omit celery, first 3 ingredients).

In a chilled mixing bowl, beat milk until frothy. Add sugar and vanilla. Beat in mayo and peanut butter.

*I never remember to chill the milk or bowl ahead of time, so I just stick both in the freezer when I start chopping the apples and grapes, and that seems to work just fine.

Pour over apple mixture.  Stir in nuts right before serving.

    Would it work if I substituted vanilla yogurt for the mayo? Mayo is pretty much the only food I am unable to tolerate.

    What a great summer salad. I would have to omit the marshmallows for myself cause I am not a fan, but if I leave them in this is one salad my boys would fight over,lol.

    Yum! That sounds good. You can probably sub the marshmallows for the marshmallow creme product. It comes in sugar free over at Amazon.

    If anyone doesn’t already know about the low fat, low cal peanut butter at Target, check it out! It’s amazing at only 3 fat grams per serving and tastes so good.

    Yum! My mom makes a very similar salad…which I also omit the celery from..yuck :) BUT hers does not have peanut butter…sour cream I think…I’m intrigued by the peanut butter! Delish, thanks for sharing and for stopping by :)

    I am laughing (maybe because it’s almost 10pm and I’m tired!) but I don’t see the purpose of celery, had mentally deleted it the minute I saw it in the recipe, and then see that YOU don’t even include it! Sounds like a great recipe…..will you serve it at the big birthday party??
